Pumkin - Miso -Soup

For 4-6 Person
Ingredients:

1 onion, roughly chopped
3 cm of Ginger, finely chopped
1kg pumpkin, roughly chopped
200g sweet potato, roughly chopped
100ml white wine
50g coconut oil
800ml vegetable stock
1 tin coconut cream
2 tbsp miso paste
1 tsp cumin
1 tsp curcuma
salt, pepper, honey
Preperation:

Heat your coconut oil in a large pot.
Fry the onions for 3 minutes before adding cumin
turmeric and ginger. Let it heat in the oil for another minute. Deglaze with wine and let cook for a minute.
Now you can add pumpkin, sweet potato and stock.
Let your soup cook on medium heat for about 20 minutes.
Blend it finely. Stir in the coconut cream and miso paste. Season with salt, pepper and honey.
Miso Paste:
Miso paste is made from fermented soybeans.
It is a natural source of probiotics and supports your digestion.
Therefore, you should stir in the paste at the end and not bring to a boil, otherwise the healthy bacteria will die.
